Sweet Potato Crisp

Ingredients:
  • 1 pkg. (8 oz.) cream cheese, softened
  • 2 lb. sweet potatoes (about 7 medium) peeled, cooked and coarsely mashed or 1 can (40 oz.) sweet potatoes, drained. 
  • 1/4 C. firmly packed brown sugar
  • 1/4 tsp. ground cinnamon
  • 1 C. chopped apples
  • 1/2 C. dried cranberries or 2/3 cup chopped fresh cranberries 
  • 3 T. flour
  • 2 T brown sugar
  • 3 T. butter
  • 3 C. honey-flavored multi-grain cereal flakes with oat clusters
Directions:
  1. Preheat oven to 350 degrees F. 
  2. Beat cream cheese, sweet potatoes, 1/4 cup brown sugar and cinnamon with electric mixer on medium speed until well blended.
  3. Spoon into 2 quart shallow baking dish; 
  4. Top with apples and cranberries.
Topping:
  1. Mix flour and 2 T. brown sugar in large bowl; 
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in cereal
  4. Sprinkle over fruit mixture.
  5. Bake 35 to 40 minutes or until heated through.
