Scotch Bars (a.k.a. Hershey Shortbread bars)

Ingredients:
  • 1 cup butter (no substitutes) softened
  • 1 cup brown sugar, packed
  • 1 egg yolk
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 1/4 tsp. salt
  • 4-6 Hershey bars or 1 1/2 pkgs. of Hershey Snack size chocolate bars
  • 1/2 cup walnuts, chopped
  • Coarse sea salt (opt.)
Directions:
  1. Preheat oven to 350 degrees and lightly grease a 15"x10"x1" sheet pan.
  2. In a mixing bowl cream butter and brown sugar
  3. Add egg yolk and vanilla and mix well.
  4. Combine flour and salt and add to creamed mixture and mix well. Optional: I put the flour and the barr mixture in a food processor and pulse until the flour is mixed in.
  5. Press mixture onto a greased 15"x10"x1" baking sheet.
  6. Bake for 15-18 minutes or until golden brown
  7. Immediately place Hershey bar pieces all over the crust. 
  8. Let stand for a few minutes so the chocolate melts.
  9. Spread the melted chocolate evenly on the crust.
  10. Sprinkle with chopped walnuts and coarse sea salt (opt.)
NOTE: When spreading the mixture on to the baking sheet, spread as thin as possible, making sure it is even all the way around. I like my Scotch bars crispy. So the thinner the better. I love the crunch!
