Cream Cheese Texas Sheet Cake

Ingredients
  • 1 C. plus 2 T. butter, softened
  • 2 pkgs. (3 ounces each) Philadelphia Cream Cheese, softened
  • 2 1/4 C. sugar
  • 6 eggs
  • 3/4 tsp. vanilla extract
  • 2 1/4 C. cake flour (see note)
Note:
You can use regular flour to make this recipe. Take one cup of all purpose flour, spooned and leveled. Remove two tablespoons, and then add two tablespoons of cornstarch to the all purpose flour. So for this recipe, you would need 2 cups of all purpose flour minus 2 tablespoons of flour for each cup add 2 tablespoons of corn starch to each cup and don't forget to sift.

Frosting:
  • 1 cup sugar
  • 1/3 cup evaporated milk
  • 1/2 cup butter, cubed
  • 1/2 cup semisweet chocolate chips
Directions:
  1. In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Add flour until well blended.
  2. Pour into a greased 15"x10"x1" baking pan. Bake at 325 degrees for 30-35 minutes or until toothpick inserted near the center comes out clean. Cool completely.
  3. For Frosting: In a small saucepan, combine sugar and milk; bring to a boil over medium heat. Cover and cook for 3 minutes (do not stir). Stir in butter and chocolate chips until melted. Cool slightly. Stir frosting; spread over top of cake. Yield: 24-30 servings.
